Meatloaf With Flaxseed and Bulgur Wheat


A couple of weeks ago, I wrote a post for Bites on TODAY about a new cookbook, FoodTrients, whose concept is all about combining various vitamins, minerals and antioxidants into recipes that are as delicious as they are good for you. The book is full of gorgeous photographs and I could hardly wait to try some of the author, Grace O’s, recipes. Last night I finally had the chance to make this meatloaf with flaxseed and I am happy to report that it was amazing. I’ve never been a fan of meatloaf (as a child, I caught a stomach bug and meatloaf happened to be the last thing I ate before vomiting, so I swore off the stuff for years) but this tastes nothing like your chop meat and ketchup variety. The cumin gives it a distinctly Middle-Eastern flavor and the pine nuts add a wonderful texture. Plus it contains fiber, omega-3s, quercetin, selenium, sulfur compounds, Vitamin E and zinc, so it’s insanely healthy. The recipe may sound a bit labor intensive, but it’s really simple to make. And totally worth the effort. We have leftovers and I honestly can’t wait to eat this meal again.
